In the town of Dizy, one of the elites in Champagne bases their operations run by brothers Jean-Hervé and Laurent Chiquet. Taking over leadership from their father in 1974, Champagne Jacquesson has grown to become one of the most revolutionary among the established estates. Vintage variation is a part of nature and only in Champagne, producers are allowed the blending of vintages to create a consistent “house” style each year. This all changed when the Chiquets chose expression of quality over consistency and in the year 2000, the 700 series was introduced with “Cuvée 728”, which signifies it being the 728th Cuvée crafted from the estate’s long history. To complement the 700 lineup, very limited bottlings of their single vineyard (lieux-dit) & late disgorgement cuvées are quite special. In their vineyards, all classified as either Grand or 1er Cru, sustainable farming is the norm with the use of herbicides eliminated, lowered yields, grass grows between rows, all this in a pursuit for the expression of terroir. At the facility, the century-old vertical press is put to work with only juice from the first pressings used. It flows by gravity to settle in tanks and then to neutral barrels for fermentation. A minimum of 5 years élevage occurs in the cellars before any release. All the wines crafted have extraordinary finesse, depth, complexity, age-worthiness, and show a true sense of terroir. The Chiquet brothers hold true to their statement: “why aim for average, when you can achieve excellence?”
