Cuvée Stellaire Castor

A 50/50 blend with Chardonnay grown on deep clay/limestone & silty limestone soils, Savagnin grown on marl. Natural ferment in steel tank and aged separately in tank, blended before bottling. An Ouillé style where barrels are regularly topped up to prevent evaporation/oxidation.

Tasting Note: 2020 - Aromas of apple, lemon, peach with citrus zest, fresh herb, beeswax, and stone mineral on the nose. Pure and precise with a core citrus & orchard fruit on the palate, fresh acidity, light to medium body with a firm texture, and mineral on the finish.
