Grapes are sourced from contract growers that believe in the same principles as Domaine Bott-Geyl and are in transition to organic & biodynamic viticulture. Traditional method sparkling wine with secondary fermentation in the bottle, 24 months on lees prior to disgorgement. Residual sugar is less than 5g/liter.

Tasting Note: Aromas of green apple, pear, yellow plum with a hint of brioche, fresh yeast, honey on the nose. Juicy and bright on the palate, tart citrus core, crisp acidity, fine bubbles with a creamy mousse, wonderfully tart and dry on the finish.
