Haut Les Choeurs Pétillant Naturel Vouvray

100% Chenin Blanc from a single plot of 40 year old organically farmed vines on clay/limestone soils. The wine is made in the Methode Ancestrale way with fermentation occurring in both tank and barrel, and then bottled with 20 grams of RS where it rests on lees for 18 months before disgorgement. 13.5% alc, 1.5 g/l RS, 20 mg/L SO2.
