鳳凰美田 純米大吟醸原酒

Aiyama rice milled down to 45%, grown in Hyogo. The rare Aiyama is a notable sake rice on par with Yamadanishiki and Omachi. A truly special sake where only the free-run sake was collected when canvas bags were filled with the most and hung over a tank (shizuku method) during the pressing stage. Bottled as a genshu (undiluted or cask strength). An exquisite sake with a great depth of flavours that can be enjoyed throughout the meal. Recommended to be enjoyed chilled but can be slightly warmed to bring out some rice umami.
