木桶菩提酛

Yamadanishiki is grown locally in the town of Miwa by a quality contract grower. The milling ratio is unpublished as it varies each growing year. Brewed in local Yoshino cedar vats. A sake with aromas of green apple, melon, and cedar on the nose, light to medium in weight with soft rice umami expanding on the palate, layered and complex with fresh acidity and good length on the finish. Enjoy slightly chilled (10-15C) in a burgundy glass.

Bodaimoto is the oldest method for preparing the Shubo or yeast starter. Relying on microorganisms in the environment, its roots originate from ancient texts of Shoryaku-ji Temple, in Nara and are very close to the brewery. 

This ancient method is revived but also adapted to craft a style that is very much unique to Imanishi Shuzo.
