Yamahai Jikomi Junmai

The flagship of Tengumai and a masterpiece of Yamahai brewing method won a Gold Medal at the London International Wine Challenge 2011. Made from Gohyakumangoku rice polished to 60%. Earthy, gamey, and great acidity balance out the sake. Pair with mushroom risotto, hard cheeses, or lamb. Serve chilled for a leaner finish. Serve warm for a fuller, sweeter finish.
