寺田本家 純米 80 香取

Yukigesho, Miyamanishiki, and Koshihikari rice, milled very lightly to 80%, grown chemical and pesticide-free. 

Tasting Note: A natural sake paying tribute to the traditional ways of sake making, the rice is milled at 80% as there were no methods to go past that in the past, the Kimoto method starter mash is used and no use of inoculated yeast relying on airborne yeast to carry out fermentation. Bottled without charcoal filtration, the sake will have some colour and light sediment, which comes naturally from the rice. Best served at room temperature or slightly warmed but can also be enjoyed chilled

Katori takes its name from the local Katori Jingu Shrine.
