Gonin Musume provides the base for this late release Koshu (aged sake).

Yujigesho, Miyamanishiki milled to 65%, grown chemical and pesticide free. A Kimoto method is used for the starter mash, relying on airborne microorganisms (lactic acid bacteria and yeast) to carry out fermentation. Bottled as a genshu (no dilution), without charcoal filtration, and aged at the brewery for a minimum of 15 years.

A very special natural sake, beautifully golden, layered with notes of dried fruit, nuts, honey, a rounded texture and amazingly balanced acidity and sweetness.
