A family-owned Domaine in the village of Rilly-la-Montagne, their 8ha of vineyards are primarily classified as 1er cru status on the north side of the mountain, Reims. The current vigneron, Olivier Paulet employs an organic approach to farming and manual harvests. The winery uses both stainless steel & concrete vats plus the modest use of old oak barrels (Cuvée Risléus). Partial malolactic fermentation is employed for most wines as malic acid, bringing length and lactic acid bringing breadth. The main focus is to showcase the particularities of Rilly’s naturally chalky terroir and Olivier Paulet’s results are stunning.
