Savagnin Sous Voile

Savagnin from younger vines growing on soils from the Triassic period. Indigenous yeast fermentation, aged initially for 6 months topped up and then for 30 months under a yeast film (voile). Due to less age than a classic Vin Jaune, this has accessibility and a balance of fruit and nutty oxidative notes.

Tasting Note: Aromas of apple chips, orange peel, grapefruit, and apricot with hints of yeast, cheese, camomile, bay leaf, and kombucha on the nose. Elegant and very complex on the palate, bright fruited with layers of spice and mineral tones, vibrant acidity, pleasant bitterness, and a very long and changing finish.
