A winegrower since 1982, the pure, mineral-laden champagnes from Pascal Doquet result from his dedication to natural farming and passion in the vineyards. Overseeing operations for the family house since 1995, he was quick to transition to “lutte raisonée” farming principles. By purchasing the family company entirely when his father retired in 2004, he is now completely independent and runs the operations with his wife, Laure. Vineyard holdings span to just under 9ha with some prime parcels in Vertus and Le Mesnil-sur-Oger. Now fully certified organic, Pascal’s approach in the vineyards has always been with great love and respect for the vines, with the use of cover crops, choosing plant-based treatments over copper, use of lighter tractors to not compact the soil. Extreme focus is put into vineyard management and the results are quite striking when touring the vineyards and comparing the soils of Pascal and Laure's to their neighbours. In the winery, the use of natural yeasts, enamel-lined tanks and some use of neutral oak is favoured.
