Rosé de Saignée Brut Nature

Based on one vintage Pinot Meunier sourced from a parcel called La Brousse in the village of Le Breuil located in the Vallée de la Marne. Vines average 52 years growing on silty, clay-limestone soils. Grapes are macerated on skins for 36 hours to extract colour with some whole clusters use. Fermentation with ambient yeast in steel or enamel tanks with malolactic fermentation avoided, aging on lees for 40 months prior to release, no dosage.
