CER/R18 (Le Creux d’Enfer Rosé)
Pinot Noir rosé from a west-facing, minuscule 0.07ha parcel of Le Creux d’Enfer in Celles-Sur-Ource, technically it’s from just 3-4 rows of vines planted in 1991 on limestone soils. A saignée method rosé where the juice was run off after several hours of skin contact. Fermentation in tank with indigenous yeast with maturation on lees for 38 months, no dosage. Extremely limited in production.
