VV/ R20 (Côte de Val Vilaine Blanc de Noirs)

Pinot Noir sourced from the 1.49ha parcel of Val Vilaine in the neighbouring commune of Polisy. Originally planted in 1974 by Cedric’s father, the vines are 40+ years and grow on bands of Kimmeridgian soils commonly found in Chablis. Only the first press juice used, crushed by foot, fermented in tank with indigenous yeasts. Maturation on lees for 16 months, no dosage. In its youth this cuvée is said to be deep, concentrated, and a classic expression of Polisy.
