Junmai Daiginjo Nakadori Kuro
純米大吟醸 中取り 黒
Yamada Nishiki rice grown in the Tojo district (rated ‘Special A’ growing area) of Hyogo, milled down to 40% and brewed with Miyagi yeast (yeast #12. Nakadori is the free-run ‘heart’ or middle portion during the pressing stage of production (where canvas bags are filled with the must and hung over a tank, Shizuku method) and is the most prized part of the sake. This is 1 of 3 in a limited-release series from the brewery and comes in a black “hyotan” shaped glass bottle.
