Junmai Daignjo Yasuke
純米大吟醸 弥助
Yamada Nishiki rice grown in the Tojo district (rated ‘Special A’ growing area) of Hyogo, milled down to 35% and brewed with Miyagi yeast (yeast #12. Nakadori is the free-run ‘heart’ or middle portion during the pressing stage of production (where canvas bags are filled with the must and hung over a tank, Shizuku method) and is the most prized part of the sake. Yasuke is a secret code for “sushi” in the Geisha world. This is 1 of 3 in a limited-release series from the brewery and comes in a clear glass “hyotan” shaped bottle.
