Junmai Daiginjo Higeban
鳳凰美⽥ “髭判” 純米大吟醸
“Kissui,” is a local rice variety grown in Yamagata, the neighbouring prefecture of Tochigi. It was developed from a heritage sake rice varietal called, “Kame-no-o,” (tail of turtle.) Perfumed but elegant, with notes of liquorice, tropical fruits balanced with rich rice notes. This sake, “Higeban,” was selected and served on Japan Airlines for Executive Class Passengers in 2012.
