Junmai Daiginjo Higeban
鳳凰美⽥ “髭判” 純米大吟醸
Kissui rice milled down to 50%, grown in Yamagata. Kissui is a relatively new sake rice developed in the early 90’s originating from the Kameno-o rice. A sake with an extreme balance of acidity, rounded texture, and depth in flavour. The name Higeban refers to the “hi-ge” or moustache that grows on the rice ear to protect itself from wild birds.
