Yamadanishiki rice that is milled down to 55%. Grown in Hyogo. Brewed with wine yeast from a wine grower friend in France. A very unique sake with beautiful wine-like acidity and fruit aromas but still distinctively a sake with ginjo aromas and umami notes. A very special cuvée that can be enjoyed now or mature further in a cool cellar or fridge. Serve chilled in a wine glass.
