Osuzuyama Distillery produces, “山翡翠” (Yamasemi), with top quality locally grown rice called, “Hinohikari,” and the distiller’s own specially cultivated yeast. Aged for at least 3 years in, “甕”, Kame (a large porcelain pot). Characteristics of a light, fruity nose with a gentle mouthfeel, gentle sweetness and refreshing finish are reminiscent of an elegant Junmai Ginjo Sake.
