Yamadanishiki milled down to 35%, grown in the Tojo district of Hyogo. A sake with aromatics of grapefruit peel, ripe pear, fresh herb, white flower. Good concentration, well balanced with a rounded texture and a drying mineral finish.

Shizuku refers to the pressing stage after fermentation where canvas bags are filled with the finished sake and hung over a tank to collect the free-run liquid (and separate it from the mash). This is the most prized and purest part of the sake. Limited in production.
