Junmai Daiginjo Platinum
明鏡止水 純米大吟醸
Grade A Yamadanishiki milled down to 35%, grown in the village of Tojo in Hyogo. Aged for 3 years in sub-zero temperatures prior to release. Pressed using the Fukurozuri method, this is a labour-intensive process where canvas bags are filled with the moromi (mash) and hung over a tank, the sake is then allowed to drip naturally into the tank separating the lees and sake.
A rich sake with great concentration, purity and elegance. One of the top sake from the brewery, crafted to mature gracefully. Enjoy chilled in a wine glass.
