Toyo Nishiki rice milled down to 80%, and grown locally without the use of any chemical fertilizers or pesticides. Although not officially a sparkling sake, this lightly cloudy sake has a lot of youthful fizz. The traditional Kimoto method was incorporated and fermented with natural yeast. The Shizenshu sakes focus on the four-stage mashing process (normally a three-stage process) which gives more depth and rice umami to the resulting sake. This is from the Arabashiri (the free or first run when the sake is being pressed) portion and is generally considered to be the brightest and most vibrant part of the sake.

Aromas of candied pear & apple, melon, yogurt, fresh yeast, amazake on the nose, a bright and fresh sake with a youthful spritz on the palate with good ripe fruit concentration, balanced acidity, finishing dry. Sediment will accumulate, please gently mix if at the bottom of the bottle and open with care. Store and serve chilled, will be slightly effervescent on open.
