Shizenshu Nigori

Rice is undisclosed and milled down to 80%, all grown without the use of any chemical fertilizers or pesticides.  The traditional Kimoto method was incorporated and fermented with natural yeast. The Shizenshu sakes focus on the four-stage mashing process (normally a three-stage process) which gives more depth and rice umami to the resulting sake. The moromi (sake lees) were passed through a stone mill and incorporated back into the sake to craft this rich creamy nigori sake.

Aromas of yogurt, coconut, fresh rice, banana, cotton candy, with hints of nut butter on the nose. A slight spritz on open, rich and creamy on the palate with flavour similar to aromas, fresh acidity, an playful balance of sweetness & bitterness, good length on the umami-rich finish. 

Store chilled and served chilled but can be slightly warmed to enhance fruitiness. Will be slightly effervescent on open.
