Doburoku
庭の鶯 鶯印のどぶろく
Doburoku is an unfiltered sake that was home brewed among rice farmers until the Meiji era (1868). It is brewed using the same ingredients as sake but the mash is not filtered. Low in alcohol (6%) with thick, creamy, yogurt-like sweetness and acidity. Perfect summer sake that can be enjoyed on its own or pair with BBQ, pork belly, mapo tofu, etc.
