Yamadanishiki and Yume-Ikkon blend milled down to 60%. 

A seasonal release, the Hiyaoroshi is a type of sake that is produced in spring and matured at the brewery until the fall, when it is released. Compared to when the sake is enjoyed freshly brewed (nama) the brightness and edges of the acidity round out, there are still fresh and ripe fruit and ginjo aromas and flavour with an added depth of rice umami and earthiness that is noted. Pasteurization happens only once in the spring before maturation.
