Junmai Ginjo Nakagumi

Yume Ikkon and Yamadanishiki rice milled down to 50%, grown in Fukuoka. Soft with ginjo aromas of apple, melon, pear, and licorice with rice umami. Supple with good richness and flavour concentration, balanced acidity, finishing dry with soft rice umami notes.

Nakagumi is the middle part of the ‘heart’, during the pressing stage. Said to be the most prized part of the sake during the pressing stage where the balance of the sake is perfect. This is a bottling of just that portion. Limited in quantity. Enjoy chilled.
