Winegrower for the family house since 1982, Pascal Doquet became completely independent and started his own Domaine, now measuring 8.6ha with wife Laure since 2004. The approach in the vineyards has always been with great love and respect. Converting fully to organics, the use of cover crops, choosing plant-based treatments over copper, the use of lighter tractors to not compact soil — the extreme focus is on vineyard management. In the winery, they use natural yeasts, enamel lined tanks and the use of some neutral oak is favoured.  Pascal has stated, “it’s the viticulture that makes the difference” and backs up this declaration with a very detailed philosophy on his webpage; it’s definitely worth a read.
