Yamadanishiki milled down to a minimum of 60%, grown locally within the town of Sakura. A sake crafted in winter, cellared at the brewery over spring and summer, then released in the fall (this process called aki-agari), during this time the edges round out and more of the rice umami becomes noticeable compared to their regular offerings. Production is very limited as only 1 tank was produced. Enjoy in a wine glass at a temperature similar to fine red wines (around 15 celsius).
