Kamenoo milled only to 90% of the original grain, the rice was grown organically and locally within the town of Sakura. Using ancient techniques, this was brewed in a wooden vat naturally with no additions, relying on airborne yeasts, and lactic bacteria to carry out the process of converting starch to sugars and the fermenting of those sugars produced. 

This Kijoshu is a sake where during the 3rd stage of the fermentation, the water to be added is replaced with sake brewed in the previous year. This results in a sake that is semi-sweet and rich with a rounded texture and amazing depth of flavour.
