Muu Kimoto

無有 生酛

Tamasakae rice milled down to 60%, grown locally, organically and without the use of any chemicals or pesticides. Matured at the brewery prior to release.

While having similar nuances to the Muu Junmai, this has more depth and is broader on the palate due to more lactic acid produced from the Kimoto method.

A line of sakes started from a partnership in 2010 with a local grower who was growing table rice without the use of chemicals. The name Muu loosely translates to “being present in nothing”, referencing that by removing the use of chemicals when growing the sake rice, the strong feelings of both rice grower & brewer are present and thus adding that much more value to the crafted sake.
