Brewed in the traditional Yamahai method to maximize the umami and flavours of the rice that has been finely polished down to Daiginjo level. Earthy, with notes of dried leaves, while retaining crisp acidity and freshness. Pairs beautifully with a wide range of foods, including hard cheese and seafood.
