Experimental and unique sake that is brewed using the winemaking technique of malolactic fermentation (MLT) which converts tart malic acids into softer lactic acids to make the sake. This sake is designed to pair well with Prosciutto since Mitobe brewery is an official agent of prosciutto from Parma. Brewing rice is a local rice called, “Dewa-san-san”, grown in rice fields owned and farmed by the brewery with an organic approach. The lactic acid becomes “Onshi acid” which occurs when the temperature is higher and creates umami flavour, so it is great to drink as warm.
