You can find this beautiful statement on the website of Celler Credo, which is a wine project led by Ton Mata, whose family established Recaredo (famous for sparkling wines). For almost a century, Recaredo has maintained a firm commitment to terroir wines that reflect their land (Alt Penedès). At Celler Credo, they interpret the grape variety Xarel-lo – “aged on lees, macerated with grape skin or stem, and no sulphites added – made today using techniques learned from our grandparents yesterday.” A project started in the ’90s but really took off in 2013. Fully biodynamic and dry-farmed in the vineyards, the vines grow among fennel, wild radish, insects, and animals that contribute and bring balance to the ecosystem. Along with Xarel-lo, single varietal bottlings of Macabeu and Parellada complement the lineup. The wines all have purity, aromatically complex, and are always the best expression of the land in Alt Penedès.
