Fusanomai rice is milled to 65%, grown naturally and chemical-free in Isumi city where the brewery is located. This sake is crafted using a 1 stage fermentation process (ichi-dan jikomi), where all the rice, koji, starter mash, water are added in 1 day, then left to ferment, where normally sake is crafted over a 4 day period, increasing the amount of rice, water and koji each day, then is left to ferment (San-dan jikomi).
Tasting Note: A very unique sake that has plenty of umami with fruitiness and balanced acidity, similar to wine.
