Brewed with 100% Yamadanishiki rice that is polished down to 60%. Brewed with the high-temperature yamahai, this sake has been aged in bottle for three years at room temperature before release.
2016, 2017, 2019 - Yamadanishiki milled to 60%, grown by contract growers in Hyogo. A Junmai sake made with the Kōon (high temperature) Yamahai starter mash, fermented with yeast #7. A muroka genshu or non-charcoal filtered and undiluted (post fermentation).
Generally a rich and bold sake with plenty of umami and fresh acidity. Aged a minimum of 2 years at room temperature prior to release. Enjoy chilled or warmed.
