Omachi milled to 60%, grown by contract growers in Okayama. A Junmai sake made with the Kōon (high temperature) Yamahai starter mash, fermented with yeast #7. A muroka genshu or non-charcoal filtered and undiluted (post fermentation).
Tasting Note: 2016, 2018, 2019 - Generally, it is a rich and bold sake with plenty of umami and fresh acidity. Aged a minimum of 2 years at room temperature prior to release. Enjoy chilled or warmed.
