Undisclosed rice milled to 65%, grown naturally and chemical-free by contract growers in Aomori and Iwate. A Junmai sake made with the Kōon (high temperature) Yamahai starter mash and fermented naturally from airborne yeast. A muroka genshu or non-charcoal filtered and undiluted (post fermentation). Matured at the brewery until ready prior to release.

Tasting Note: 2018, 2019 - The flagship cuvée that was started in the 70’s, rich and full-bodied with fresh acidity, pronounced rice umami. A true natural sake that is crafted to be enjoyed throughout the meal, enjoy slightly chilled to warmed to discover the range of flavours.
