Niizawa brewery was founded in 1873 and is run by their 5th generation descendent, Iwao Niizawa, well-known as the youngest winner to win the Junmai Sake Tasting Championship with a perfect score at the age of 20. 90% of his handcrafted sake is Junmai with a philosophy to make “harmoniously balanced sake with pleasing fragrances and moderate sweetness and alcohol to enhance the umami of dishes.”
