Like a village wine with the grapes Listán Negro and a drop of the Tintilla grape, from contract farmers and estate fruit (a total of 35 plots), all grown within La Orotava. Vine age ranges from 10-180 years, growing on volcanic soil with some old vines still on original rootstocks (ungrafted) and trained in Cordon Trenzado. Fermentation in concrete with indigenous yeasts, some whole clusters included.  Aging in concrete (70%) and the remainder in neutral French oak barrels for 9 months. All plots are vinified separately and blended prior to bottling.

*the name 7 Fuentes refers to the seven climats in the DO of Valle de Orotava

Tasting Note: Slight volcanic reduction initially blows off to notes of grapefruit, red plum, and raspberry with hints of pink peppercorn, wildflower, and salty mineral on the nose. Light – medium-bodied on the palate with a juicy red-fruited core, fresh acidity, fine tannin with some grip, and good length on a layered finish of fruit and spice.
