Porrera

A small endeavour was created by Dominic Bairaguet and her husband Francisco “Paco” Castillo-Serrano. Born and raised in Porrera, they purchased an old vineyard just outside of town and started making wine in 2002 with just a couple of tanks and six barrels in the basement of their home that used to belong to a baker. Their current cellar is housed in a 150-year-old building in the town of Porrera. Currently, the couple manages a small 7ha of vineyards with the help of their daughter, Ingrid. Vineyards are on steep, rocky slopes of llicorella soils: black slate & quartz soils and is divided into 2 areas: Vinyes Altes with very old vines of Cariñena and Garnacha, and Vinyes Baixes where vines of Merlot & Cabernet Sauvignon are found. Vineyards are managed sustainably and organically as possible, with the upmost care as some vines are past 100 years of age. During harvest, Paco will go through the vineyard over several weeks to ensure grapes are picked at optimum ripeness. Wines are allowed to naturally ferment as no yeast is added, relying on the wild yeasts on grape skins. The resulting wines are faithful to the terroir, vintage, and traditional methods: truly authentic Priorat.
