Junmai Ginjo Wakanae

純米吟醸 若苗

A blend of Yamdanishiki and GInfubuki milled down to an average of 60%. Fermented with Kanazawa yeast (yeast #14), this is a youthful bright sake with aromas of citrus and orchard fruit on the nose, bright and fresh on the palate, good acidity balancing the hint of sweetness, clean and drying on the finish with a hint of herb.

Wakanae is in reference to a young rice stalk growing in the field. This is a sake crafted near the end of the production season, bottled and pasteurized right away, softening its richness and preserving its youthful and fresh aromatics and flavour.
