Bouzy
In the Grand Cru village of Bouzy, where Pinot Noir is king, Georges Rémy crafts brilliant champagne (and reds) with astounding texture and ineffable charm! After acquiring a viticulture and oenology certificate and work experience in Bordeaux, Georges returned home to help his father tend the family vineyards. While working with his father and as a vineyard consultant for neighbouring growers, Georges, with a love for red wines, first crafted a still red wine with the family parcel of old vine Pinot Noir. The quality was fantastic and it was in 2011, Georges’ parents offered him an old vine plot of Pinot Noir and the estate commercially produced a Bouzy Rouge, sparkling wine production followed in 2014.
Georges now oversees the family vineyards totalling 4.7ha, split into 17 parcels in Bouzy, Ambonnay, Louvois, and Tauxières. The vineyards are farmed organically with some biodynamic practices in use, he avoids chemical fertilizers, and together with Antoine Paillard and Benoit Lahaye, they create their organic compost. Georges prefers to harvest later, in general, to achieve optimal ripeness in the grapes with balanced acidity and will often sell 80% of the harvest, to continue to craft his terroir-focused still wines and Champagnes. In the cellar, each parcel is vinified separately and oak barrels in varying sizes are used to mature wines. The goal for Georges is “to preserve the quality and energy of the wine” and each of the cuvées produced in both red and sparkling wines are a pure expression of each terroir and the hard work that goes into the vineyards.
